Embarking on a road trip is one of the single most exciting ways to explore the open road and immerse yourself in the beauty of nature — and when you’re in a Vanish van, you might as well be traveling in a top-of-the-line kitchen on wheels.

 All Vanish vans come equipped with an induction stove, sink, fridge and freezer, so you’ll have all the tools you need to create delicious meals while on the go. Not all of us (myself included) are certified Iron Chef contestants, however, so improvising on the road doesn’t come as naturally. Let’s explore some mouthwatering recipes and meal ideas that are perfect for cooking in our kitchens, so you can plan your meals before you officially hit the road.

 

Breakfast: Rise and Shine with Campervan Cuisine

Scrambled Eggs with Veggies: Start your day with a hearty breakfast. Whisk up some eggs, toss in diced bell peppers, onions, and spinach, and cook them on your induction stove. Top with cheese, and you've got a satisfying and nutritious morning meal.

Campervan Pancakes: Mix up Bisquick batter ahead of time and store it in your fridge — this could come in handy in multiple recipes. When you're ready for breakfast, pour the batter onto a hot griddle or pan. Add blueberries, chocolate chips, or bananas for extra flavor.

 

Lunch: A Picnic on Wheels

Wrap It Up: Prepare wraps or sandwiches with your favorite fillings like turkey, avocado, lettuce, and tomatoes. Add a dash of mustard or mayo for extra zing. Wraps are easy to assemble and make for a quick roadside lunch.

Trail Mix: Create your custom trail mix with a variety of nuts, dried fruits, and a touch of chocolate for a quick energy boost during hikes or pit stops.

Fruit and Yogurt Parfaits: I told you mason jars were useful! Layer yogurt, granola, and fresh fruits in the glass. These parfaits make for a refreshing snack any time of day.

 

Dessert: Satisfy Your Sweet Tooth

Campfire S'mores: No campervan trip is complete without the classic s'mores experience. Roast marshmallows over the campfire, sandwich them between graham crackers and chocolate for a gooey treat.
